Overview
- The Bavarian Staatsbrauerei Weihenstephan has taken over the Platzl site and carried out a full gutting and core rebuild that project leads say took about fourteen months and cost several million euros.
- What began as a small renovation revealed major infrastructure problems such as failing electrics, damaged wiring, inadequate plumbing, and non-compliant ventilation so the team replaced systems, windows, and the kitchen completely.
- The Zinner family — Sebastian, Cornelia and Ferdinand — will operate the venue with Sebastian as head of the new kitchen, shifting the site from Schuhbeck’s former fine-dining identity to a more accessible, beer-centred wirtshaus.
- The layout includes roughly 190 indoor seats, about 140 terrace places plus a separate Salettl, a Stehausschank for quick drinks, a large 'Kuchltisch' for up to 17-person beer tastings, and a souvenir shop.
- The building is owned by the Free State of Bavaria and managed by the Bavarian State Opera, the opening has been delayed from summer to autumn, and operators say beer prices will be set to match the local Platzl market rather than Oktoberfest rates.
