Overview
- Solo Bread opened its Rock Ferry cafe at 10am Friday at 220 Bebington Road, with long queues reported at launch.
- The new site replaces the bakery’s Birkenhead industrial unit and will trade Fridays to Sundays from 10am.
- Founder Harry Doherty said the shop adds direct retail to a business that was about 90% wholesale to improve margins and raise staff pay.
- The bakery focuses on naturally leavened loaves made with organic, stoneground UK-grown grains, which keep the whole grain for deeper flavor and more nutrients.
- Doherty built Solo from a garage with about £2,000, grew a following through Instagram and an Oxton Market stall, and later earned a Good Food Guide Top 50 Bakeries nod.
