Roman Culinary Body Demands BBC Correct Cacio e Pepe Recipe

Fiepet Confesercenti has formally asked the broadcaster to retract additions of butter and Parmesan to uphold the dish’s traditional three-ingredient preparation.

Overview

  • The BBC Good Food website published a cacio e pepe recipe listing spaghetti, black pepper, Parmesan and butter as core ingredients.
  • Claudio Pica, president of Fiepet Confesercenti, said the authentic Roman dish uses only pasta, pecorino romano and pepper and called the BBC version a significant departure from tradition.
  • Fiepet Confesercenti notified the British embassy in Rome to protest the recipe’s errors and flagged misleading steps shown in its demonstration video.
  • Chef Riccardo Aquilani joined the call for correction, emphasizing the use of hand-grated pecorino romano Dop and artisanal tonnarelli cooked al dente.
  • The BBC has yet to respond to the formal rectification request submitted on August 6, leaving the dispute unresolved.
