Mervier Canal Wins Spain’s 2025 Best Butter Croissant, Marking Toni Vera’s Fourth Title

  • Organized by the Gremio de Pastelería de Barcelona, the competition was held on October 7 at the Escuela de Pastelería del Gremi in Barcelona.
  • The jury included noted pastry masters and chefs with Michelin stars such as Oriol Castro (Disfrutar), Jordi Vilà (Alkimia) and Artur Martínez (Aürt).
  • Entries were scored out of 100 on taste (40), crumb structure (15), lamination (15), color (10), shape (10) and finish (10).
  • The Gremio reported 60 pasteleros from ten provinces attended, while El Periódico counted 57 delivering 12 croissants each between 9:00 and 11:00.
  • Vera’s team spent more than 48 hours on the product, baked 80 croissants the morning of judging and selected the best for presentation, with the guild citing a €1,000 prize and significant sales uplift after a win.
