The shooting occurred near mile marker 320, approximately 10 miles west of Tucumcari and about 50 miles west of the Texas state line.
Authorities have released a photo of the suspect, last seen wearing a brown hoodie and jacket, and described him as 'armed and dangerous'.
The officer was conducting a welfare check on a vehicle pulled over on the interstate when the shooting took place.
Police have urged the public not to approach the suspect if seen and to immediately call 911.
