Following a tie in regulation, Stubbs and Ding made birdie at the par-4 18th hole, eliminating Zheng who could only achieve par.
Stubbs sealed his win when his birdie putt placed near the hole in the second playoff, while Ding missed his par putt.
Stubbs' win grants him coveted invitations to the renowned 2024 Masters and next year's British Open at Royal Troon, adding an exemption from qualifying for the British Amateur.
Sampson Zheng, who set an amateur course record shooting a 65 on Saturday, saw his lead diminish as he finished with a final-round 75.
