Germany’s Egg Consumption Rises Again as Supply Tightens Before Easter

Preliminary 2025 data show higher demand outpacing modest output, leaving imports to cover more than a quarter of needs.

Overview

  • Per-capita consumption reached 252 eggs in 2025, lifting total use to about 21 billion, according to the BZL’s preliminary figures.
  • Domestic production edged up to 15.3 billion consumption eggs, covering 72% of demand as the self-sufficiency rate fell for a fourth straight year.
  • The laying-hen flock declined by roughly 400,000 to 51.1 million, while productivity rose to an average of 299 eggs per hen.
  • The BZL cites bird flu, the newly reported Newcastle Disease and the rollback of small-group housing for tighter supply; the market is described as tense with a tight but serviceable Easter offering.
  • Imports are filling the gap, led by the Netherlands at 69% of shell-egg arrivals, followed by Poland at about 16% and Belgium around 3–3.4%, while German shell-egg exports fell roughly 12%.
