He also bombed a sculpture of Lenin and Mao in San Antonio, Texas, in 2022.
Rodriguez faces a potential sentence of seven to ten years in prison.
He was arrested in Louisiana in November 2023 after DNA evidence linked him to the crimes.
The judge will decide whether to accept the plea deal's sentencing terms before the October hearing.
