Eleven Madison Park to Reintroduce Meat and Fish in Fall Menu

Humm says the change will restore inclusivity, bolstering revenue after a slump in private events accompanied by falling wine sales.

Eleven Madison Park is bringing back the meat, four and a half years after having an all-vegan menu.

Overview

  • The restaurant will add select animal products—including fish, meat and honey-lavender-glazed duck—to its multi-course tasting menu starting October 14, with fall reservations opening September 1.
  • Prices remain at $365 for the full tasting menu and diners can still choose a fully plant-based experience without any extra cost.
  • Plant-based cooking will stay at the menu’s core, with vegan options on every course and an entirely plant-based cocktail and pastry program.
  • Chef Daniel Humm acknowledged the all-vegan format “unintentionally kept people out,” describing the reversal as a hospitality-driven adjustment.
  • The announcement drew criticism from vegan diners online and prompted debate over sustainability and commercial viability in haute cuisine.
