Kiptoo's victory marks the 17th win for Kenyan runners at the Athens Marathon since 2001.
Morocco's Soukaina Atanane won the women's race with a time of 2:31:52, followed by Kenya's Caroline Jepchirchir and Greece's Gloria Privileggio.
The event saw a display of support for Palestine, with a 'Free Palestine' banner unfurled and Palestinian flags waved at the Panathenaic Stadium.
The marathon saw a record 20,322 runners registered to start, surpassing the previous record of 20,041 set in 2019.
