Cordelia Team to Open ROSY, an Open-Fire, Communal Restaurant in Hingetown Next Month

The team casts the project as a neighborhood party around live fire with food driven by local terroir.

  • Watts and Cimino plan to debut ROSY in late January or early February 2026 with dinner-only service Thursday through Monday.
  • The concept centers on open-fire cooking and a communal format, with hyper-seasonal dishes sourced largely within a 200-mile radius of Cleveland.
  • Menu teasers include celery with preserved lemon and green chili ricotta, pork neck with sage and brown butter, monkfish with paprika and dates, and a bread-and-butter soft serve dessert.
  • Located at 2912 Church Ave. in the former Alea space, the reworked room seats about 50 at communal setups plus a 14-seat indoor-outdoor ledge when the garage door is open.
  • Design partner Shred & Co. created custom communal seating and a warmer interior, as the project builds on Cordelia’s acclaim including Cimino’s James Beard recognition and a 2025 Food & Wine Best New Chefs honor.
